I was in Las Vegas recently, and caught a picture of a Cessna Citation X (N902VP) landing on August 16. When I checked the FAA's database for details on that aircraft, it says the registration certificate wasn't issued until a day later, on August 17. Given the apparent age of the aircraft (its serial number is given as 750-0002, so it appears to be the second Citation X ever built), it was likely re-registered recently.
My question is, why is there a disparity in when I saw aircraft flying with the registration and when the FAA says it issued the registration certificate?

Aircraft registration may take several weeks, if not months to be processed.
