Has anybody else ever noticed that for the same airline and class, that a certain parts of the world give better catering than others, EVEN THOUGH the catering companies are the same?

Why is this? This is a global world and if an ecologically dead place like Dubai can offer the freshest lettuce, prawns, and orange juice, then why can't other others? For instance, on a flight to DBX from JFK, the food was better out of DXB.

Also, it seems that catering from Europe is better than from USA

Because the catering company is the same doesn't mean that the access to and quality of raw ingredients is the same.

Airlines tend to have a set price per meal per passenger that is consistent world-wide. US$5 will buy you a lot less in the US than it will in, say, South Africa or places in Asia.

I regularly fly CX between JNB and HKG -- in Y there's not a huge difference in the catering between the two points, but in J there is quite a significant difference. Both in terms of the variety of dishes offered and the quality (ex-JNB has more variety and appears to be better quality).

Last time I flew JNB - HKG I had a choice of four different dishes for lunch, including a delicious Chicken Tikka. Out of HKG we had a choice of two -- and by the time the trolley got to me, I had a choice of duck, or duck.

I'm tired of the A vs. B sniping. Neither make planes that shed wings randomly!

I noticed while I was on DL from ATL-ZRH, not all of the special meals were available (ex- no vegan meal, only lacto-ovo vegetarian). The lacto ovo meal turned out to be the standard pasta meal.

On the way from LHR-ATL, I could get pretty much any meal I wanted. I believe they even had a geniune Muslim Meal. Perhaps because DL uses Gate Gourmet instead of LSG Sky Chefs?

Having been in catering for many years, I'd answer COST. You can certainly supply a better product when costs are lower. Wages, food stuff, etc. Many times on the same budget we were able to supply better meals from international cities. EXCEPT Bermuda....we carried as much from the US in the cargo holds and swapped them on the ground.

DL doesn't use Gate Gourmet at all airports. With DL's hubs, DL uses Gate Gourmet at ATL, CVG, MEM, and LGA, while DL uses LSG Sky Chefs at SLC, JFK, MSP, and DTW.

And, in addition, some carriers might be willing to spend more on a meal then other carries. Just a rondom example, Carrier A might be willing to pay Gate Gourmet $5 per meal, and Carrier B $7. Thus, Gate Gourmet can make a 'better' or larger product for Carrier B then it can for Carrier A.

Ultimetly is boils down to cost per meal that am Airline wants....These costs obviously will be determined by the cost of the Ingredients in the Area concerned.
Pay more get better options.

From my experience, the food on BA38 PEK-LHR is not that different from BA39 LHR-PEK (Y only)
The only major difference is that BA38 has a very nice snack box service in addition to the two meals, while on BA39 only the two meals are offered..

In AMS DL also uses Gate Gourmet, and I can tell you they are busy with this airline
