Is it possible to turn the flight recorder off from the flight deck? For example by removing a fuse?

Does the flight recorder start pinging when an impact of the structure of the fuselage is detected?

Yes, and in some instances crew need to pull that to preserve the information on the recorder.

No, it does have an underwater locator that transmits low power for around a month minimum.

Yes through a CB....but some aircraft can have a always on in air logic.

no thats the function of the Impact ELT ...however a water activated beacon [underwater locator beacon/ULB] will send a transmission.

While the recoders might be able to be turned off, the pingers on the Data and Voice recorders can not be turned off from the flight deck. They each have their own dedicated battery. The pinger and the battery are about the size of a two cell "c" flash light mounted to the outside of the recorder. They get tested I think yearly with a life cycle of a few years. Can't recall the actual numbers.

True, but I've changed a few well before that date when they fail the test.

True....but scheduled replacement would be based on the stamped date unless as you state a test found a fault warranting its replacement.

Didn't that FedEx crew that had the company rider go nuts with the crash axe due that to preserve the recording of the attack?

I think the attacker pulled the fuse prior to the crew getting onboard hoping that the event wouldn't be on tape. The F/E caught it and I think they got it all. Though it has been a while since I read all of this.
