Hi!!

I know that the centre of gravity of an aircraft is percent, for example 35.8%.
But percent of what?

The percentage of the centre of gravity is the percentage of distance of the aerodynamic cord of the wing profile. So if the centre of gravity is at 35.8% that means that the CG is at 35.8% of the total length of the cord from the leading edge of the wing.
