Why Do Airbus Elevators+Ailerons Droop Down?

I have a quick question about Airbus aircraft, Why do the Elevators and Ailerons "droop" downward when the aircraft's engines are shut down? Also when the engines are started back up after push back, why does the plane make this grinding sound? My theory is that it is the hydralics being turned on or off, but could you please explain in better detail why this happens.

They droop do to the lack of hydraulic pressure from the engine driven hydraulic pumps or the electric hydraulic pump running.

As for the grinding sound, you'll have to be alittle more specific has this could be numerous things.

Now that I think about it, the closes thing to a "grinding" sound you hear may be the jackscrews as the flaps/slats are being lowered.
