Briefly, what flap settings are used for which phases of the following aircraft: 737, 757, 747, A319, CRJ?

And what are these aircraft's target speeds for landing?

(I admit, this is info so I can get better at MS flight simulator)

A commercial pilot out there could give you exact and more comprehensive figures, but a general estimation can be made by taking the aircraft's stall speed (with extended flaps taken into account) and adding around 30%. As I said it's quite rough, but good enough I suppose...

Luckily, however, I have figures for the approach/landing speeds of the aircraft you wanted, flaps down, at maximum landing weight, and at s/l. They are as follows:

737-600: 125 kts (144 mph)
737-700: 130 kts (150 mph)
737-800: 142 kts (163 mph)
737-900: 141 kts (162 mph)
747-400: 146 kts, 157 kts w/higher thrust engines (168 mph, 181 mph)
757-200: 132 kts (151 mph)
757-300: 143 kts (165 mph)
A319: n/a
CRJ-200: about 135 kts (155 mph)
CRJ-700: n/a
CRJ-900: n/a
