Nice report! SK will be missed in SEA. Maybe when the economy improves and they are able to get their house in order, they will return.
A few comments on your pictures:
- you're right that SEA doesn't have the best food choices, but I think you may have missed the central terminal food court that has the better selection (it's about 5 min walk from the Africa Lounge)
- the pictures of the skyscrapers that you took is the city of Bellevue, not Seattle (Bellevue is 10 miles east of Seattle)
- it was indeed Mt. Rainier that you saw upon landing

It was interesting to see SK's long haul product these days. It seems like the trays have gotten bigger, though it seems a bit pointless to make them bigger when the amount of food proveded is exactly the same. Neither did i like the looks of the china, etc the food was served on, it looked very sterile (all whie you know) almost like hospital food
It was nice to see from copenhagen again, eventhough I was there last week. It seemed like you visited all the places I never got time to do, aaww...
Though I did choose to travel the green way to CPH, by train i.e. In the very comfortable First Class X2000. Great J-clas' ish service for a price even lower than the cheapest coach flight!

I was on SAS to Chicago two years ago (also in the exit row) and I think the are no worse or better than any other airline, and just like all other airlines the food isn't the best part on the flight. I also would like to see AVOD on their planes, the IFE gets kinda boring after a while.
I'm gonna fly ARN-EWR-ARN on Malaysia Airlines in about two weeks, gonna be interesting to compare compare and see if MH really is as good as everyone says.

Ive never flown SK, but I did just return from a Finnair flight from HEL-JFK-LAX. The service was almost exactly what you described. Very clean planes, professional FA's, very clean airport with bad food options (at HEL), and grotesque onboard food. The only difference was that Finnair has AVOD. Maybe the Scandic carriers are very similar indeed.
