I've flown four times with LCCs:
Nice-Geneva and back with easyJet (737 300)
Toulon-Orly and back with Air Lib Express (now defunct) (md83)
Nice-Stansted and back with easyJet (737 300)
Marseille-Gatwick and back with easyJet (737 300 and back on a 737 700)
Service: easyJet f/as were very VERY friendly during my 3 flights with them. The stewardess smile a lot. Inflight they sell things to eat/drink, it's called the easyKiosk. The flights were all uneventful.
The seat pitch and legroom were fine with easyJet, especially on the NCE-GVA trip since I was seated next to an emergency exit. The legroom with Air Lib Express was a nightmare. I don't feel more cramped when flying with easyJet than with any other airline. The aircraft was tidy and clean. Really, there was nothing much to complain about the flight itself. We departed and arrived on time.
The main problem I've had with easyJet was the check-in at Stansted. It was a nightmare, there was only one queue to access the check-in counter, and it was a LOOOOOONG queue. It was a real MESS, happily there were some easyJet girls shooting "PASSENGERS TO NIIIIIIIIIIIIIIIICE, MALAGAAAAAAAAAAAA", so if you're late you're given priority access to the checkin counters.
But the best part of those easyJet flights were the PRICE !!!
I think I paid 50€ for NCE-GVA-NCE, 120€ for NCE-STN-NCE and 56€ only for MRS-LGW-MRS. Each time I flew to my destination and back on the same day, spending a day at the airport for spotting. It's almost impossible to do this with regular airlines, because to get cheap flights you have to spend at least one night at your destination. This is not the case with easyJet.
easyJet is great, and I love the free seating system: I've always managed to get a window seat.
What I'd like to be changed ? One thing only: I'd like those low cost carriers to have more style...when I fly with easyJet I have a bit the impression of being in a bus, this is not the case when flying AF or EI (even though EI is now a LCC for medium haul flights). The FA's uniforms are ugly, the livery looks cheap...OK I know this is a part of the low cost system, but I'd like easyJet to have some more style.

I once tried to look how are the fares on routes such as Marseille-Algiers, Marseille-Casablanca, Marseille-Tunis...
The fares are incredibly expensive (often more than 800€), and yet those flights are quite short and full very often. I'm not a specialist but there's a very heavy traffic between Marseille, Lyon, Paris and North Africa. I guess it's the same for other big European cities, so I bet a North African lcc could do very well...
And since Tunisia is quite a touristical place, why not ?

I flew Ryanair B737-800 on SZG-STN-SZG in July 2003. Service... well - they offered products for horrible prices. Food is very expensive too.
The f/a's were not only on the aircraft... They did check-in, watched the boarding at the gate and cleaned up the aircraft after the flight!
Seats: Extremely cramped, almost no legroom, but what do you want for 45 euros roundtrip!!!
Germanwings A319 on ZRH-CGN-ZRH in August 2003.
Seats were fine! Leatherseats ex-Lufthansa! But very cramped too!
Inflight service was the same as on FR. Everything to buy - nothing for free. Germanwings even had inflight entertainment! Ryanair did not have.
Also, they even offered telephone cards, railway tickets etc... onboard!
