Assuming you're on one ticket, you should be fine, because AA will rebook you to LAX if you miss a connection. The better question is why on earth wouldn't you just fly GRU-LAX nonstop?! Even GRU-DFW-LAX would make much more sense.

For your Toronto-SF trip, yes, US immigration and customs would be done in Toronto, so when you arrive to ORD, you'll arrive as a domestic passenger. No different than if you had a standard domestic one hour connection.

Can't really help you with the first two - that's really up to you IMO.
