How Do You Hard Boil An Egg?

Mon Jul 28, 2003 10:13 am

Without the shell cracking???

That is pretty much what keeps happening to me.

Just boiled a dozen up and had 3 of them crack and split.

Is there some trick to keep them from doing that?

Start out with water that's not already boiling.

I do it this way.

Put a dozen eggs in a pan full of cool tap water (just enough to cover the eggs), turn on the flame under it and come back in 20 minutes. Works every time. For those cursed with electric stoves, ya'll are on your own as it is impossible to cook properly with electricity.

Besides, a cracked shell is not a problem. It just means that I have a warm egg to eat before anyone else has a chance at them.

Cold water, fire and wait. Those pretty much where the instructions that I followed.

Had a couple that also didn't come out of the shells cleanly either, wanted to stick to the inside.

I would ask mom, but she isn't here.

You put them in unboiled water, boil it and wait. What, boiled eggs for breakfast? I prefer them sunny side up or scrambled, please!  Big thumbs up

Actually I was going to do deviled eggs.

Actually hard boiled eggs are great for breakfast if you are running late, just make some up beforehand and keep them in the fridge until you need them.

I usually go through them in salads so there is a rotation.

It took me some experimenting before getting it right (hey, i needed some food anyways).

Drop an egg into cool water (gently, you'll weaken the shell if you have a high drop height) and just like the others said: come back 20 mins later.

Get one of these:

All you need to do is to sting a little hole into the less pointed end of the egg, put it in the boiler with that end up, put cold water in it (measured with a small measuring jug that comes with the boiler) and switch the thing on.

Don't you have egg boilers in the US?

I learned from a caterer that if you leave them in cold water for about 15 minutes after they are done...it will dissapate the sulfur (the green shit around the yoke).

Clearly, this only works if you want cold eggs...not ones for breakfast

The sticky egg syndrome is caused by old eggs. When I'm making deviled eggs I buy a few new cartons on the day needed and boil them that day. I then immerse them in ice water. The egg contracts but the shell doesn't. Cracks a few but you'll be cracking them anyway in a few minutes.

Microwave them - put a half dozen in your microwave and zap them for 9 minutes on high.
