I Never Knew Cole Slaw Had So Much Vitamin C

Mon Aug 09, 2004 1:48 am

And I'm not talking about that one-hit wonder, either. Though I wouldn't mind giving her some 'nutrition' of my own.

While I usually eat only homemade cole slaw, the circumstances dictated that I go with the store bought brand. BTW, this was a few days ago.

The curious cat that I am, I carefully inspected the nutritional information on the package. The numbers were quite unimpressive, until...

230% of recommended daily vitamin C!!

WOW! I thought. I've never been a fan of cabbage by itself - or mayo for that matter. But I guess when they team up it's a nutritional powerhouse. Although I suspect it's primarily the cabbage to thank for the vitamin C.

I know if you take in too much vitamin c there are some side effects, I think similar to the symptoms of lack of the vitamin. I can't remember the exact side effects though, but I know in some instances too much vitamin c can be bad news.

Too much Vitamin C is kinda useless, as the more you take, the less your body can absorb.

Overdosing on the stuff can lead to symptoms including the sh*ts, stomach cramps and sickness. Some studies have also linked it various ailments including kidney stones and DNA damage in white blood cells, despite previous evidence that Vit C was good at defending the body against cancer.

(If that doesn't cheer you up I don't know what will! hehe)

Enjoy your coleslaw anyway.

Vitamin intoxication. Vitamin A,D,E,C are fat soluble so they remain in your body for a long time. Don't eat too much of that stuff.

Fortunately, I think Jcs17 is the only one we have to worry about od'ing on cole slaw.

"Vitamins are either fat-soluble or water-soluble. The fat-soluble vitamins can be remembered with the mnemonic ADEK, for the vitamins A, D, E, and K. These vitamins accumulate within the fat stores of the body and within the liver. Fat-soluble vitamins are often associated with toxicity when taken in large amounts. Water-soluble vitamins include vitamin C and the B vitamins. Water-soluble vitamins taken in excess are excreted in the urine and are not usually associated with toxicity." http://home.howstuffworks.com/vitamin-c.htm

It's water soluble: I think that's why you need to replenish your supplies often, it will just leave your body instead of being stored. You'd have to take A LOT to have any ill effects. 250% isn't going to hurt you. That's why you get the nice chartreuse pee when you take it.

Then why would they produce daily vitamin C tablets that have 2500% of the DV??

Scratch that, they contain 833% of the DV. I got it mixed up with Vitamin B6 which has 2500% DV.

Because your body can not use all 833%. It takes in a portion of it, which is why the original # is so high.

Yeah but didn't you say that having too much would have side effects? I'd figure taking 500mg would be a little too much, or are you talking more than that?

I was told the body absorbs about 30% - 40% of the vitamins and minerals from a tablet source.

As Aa61hvy stated, if the vitamin had "100%", you would only be getting about a third of it.

You need about 2000mg to have side effects from taking too much. The RDA is between 60-90mg, so you'd have to take more than 20xs the rda or 2,000%. I wouldn't worry about getting it from food, you'd have sit down and chow on a bottle of vitamins.
