Mmmm...Duck

Sun Feb 05, 2006 5:06 am

I finally went and checked out Savenor's, a specialty food store that has opened on Kirkland Street in Cambridge. Some of the stuff is quite pricey (they have Kobe beef, fois gras, etc.), but I picked up some reasonably-priced duck legs and shrimp for tonight. I'm so glad to be able to find duck available, and it's less than a five-minute walk from my place!

So, it'll be:

roasted duck legs with ginger fig glaze
ponzu shrimp
mashed 'taters
grilled mixed squash with rosemary-infused olive oil and gorgonzola cheeze

It turns out that Savenor's was a butcher shop at the very same location for years. It was destroyed by fire some years ago, and now they've re-opened as a top-end butcher and specialty market. Jack Savenor was a good friend of Julia Child's, and right outside the door is where Julia wrote Bon Appetite in the wet concrete back in the 1960s.

So who else loves duck?

I like Peking Duck, but I don't get much chance to have it, or other kinds of duck much.

Had duck only once and found it very fatty. I would try it again though.

I hope yours was better?

There is not much finer than a roast duckling with either a reduced brandy or a Cumberland sauce.

Duck is quite fatty, but the fat is easily removed with the skin. Or the teeth. Duck fat is not nearly as bad for you as beef or pork fat.

a Cumberland sauce

Do tell.

I must say my duck legs turned out quite well. The fig/ginger sauce was perfect with them.

Cumberland sauce is usually orange and lemon juice/zest, port, and black currant preserves. The recipe I have I can send to you when I get back home next week.

My favorite is the kind that seems to be hiding under a bed of rice. Only the beak and eyes are visible when this dish is presented. I love a good Peeking Duck.  yes

Thanks, mate, but no need. I never follow recipes. I'll figure it out.

I do like duck on occasion. I'd be very happy to have that place a 5 minute walk from my place.
