If you look on the classic VW
1.9 TDI engine, you can get it in 66kW, 74kW, 81kW, 96kW versions. The difference in 66kW and 96kW is not just different chip but also completely different turbo, air inlet, and other components. I'd simply have more faith in Audi with all their technology and resources they have to design the engine than someone with just "hammer and screwdriver" doing some magic with my engine (this is of course not the case if you are thinking about having some manufacturer-certified tuning from company like ABT, which specializes in Audis). But then with ABT you are likely to fork out more money than what is the difference between the two engines in question.
How much is the difference in price of the 2.7 TDI (with solid particle filter?) and the 3.0 TDI quattro wherever you are buying it? Over here it's approx. 5,700 EUR. Is it worth the money?
The only reason I'd think about the 3.0 would be because it's quattro and the price difference between 2.7 quattro and 3.0 quattro is minimal (40EUR to be exact).
In either case I'd take the version with solid particle filter.
If you want more expert opinion on chiptuning I'm sure there are plenty of Audi-fan websites where you will get more info and insight. I was just offering my opinion.
In any case I think you chose a great car and I hope you'll enjoy it.
