The Dessert Thread

Lots of food threads have been started, but don't remember seeing very many dessert threads, if any at all. And really, who doesn't like a damn good dessert every...day. So here is what I slaved over today (I love baking; plus it is probably why I'm always invited to pot lucks):

Starting at the white cake: tres leches cake covered in whipped cream; tiramisu topped with cocoa powder and cinnamon; two rammekins of chocolate mousse; the bottom two cakes are a Texan original creation, Chocolate Hangover cakes; and, finally, at the top left, chocolate chip cookies. The Chocolate Hangover cakes were really fun to make. I drastically altered a generic bundt cake recipe, added some cinnamon, nutmeg, four ounces of melted, unsweetened chocolate, etc. Then it is wrapped in cheese cloth and soaked in espresso and Tia Maria liqueur for a day. Afterward it is covered in a hard chocolate ganache. That still left the middle area, though. So the hole in the middle was filled to overflowing with chocolate mousse. The cake, ganache, and mousse took a combined 24 ounces of chocolate. Also used in the various recipes were approximately 4 cups of heavy cream, lots of sweetened condensed milk and evaporated milk, 5-6 cups of sugar, about 2 dozen eggs, a couple cups of Vin Santo dessert wine and Tia Maria, and more fun stuff! If anyone wants any of the recipes, let me know and I'll post em.

There's a Japanese restaurant I go to sometimes for special occasions that has a dessert of miniature mochi cakes in a red bean sauce. Simple, but absolutely superb.  drool

Ice Cream is a weekness of mine, especially cookie dough ice cream.

Man - that looks good, though I think I'd lean more towards the chocolate cakes. A dessert is supposed to be heavy, things like whipped cream and cocoa powder are simply garnishes!  Wink

I just got done at my first attempt at Flan, mom's making her stacked enchiladas tonight and I'm supplying dessert.

Like I mentioned above, I tend to the heavier desserts (I am a bear after all!). Combine chocolate, caramel, nuts and possibly cream cheese, in just about any form, and you'll have me eating from your hand (literally!).

I tend to have chocolate cookies for dessert. I'll eat anything pure Chocolate -- cookies, cakes, brownies, fudge, ice cream ...

Creme Brulee...but the top HAS to be really crunchy.
Mousse of just about any kind, but chcolate, strawberry, mango and mocha are favorites..
Creme caramel.

With all the amazing cooking talent on a.net, we should have a huge get-together based on food. That would be one hell of a meet.

Wouldn't it be cool to have an "A.net cooking team" compete in a cooking contest somewhere?
