How Do You Like Your Eggs?

Sun Oct 13, 2013 4:58 pm

Personally, scrambled. However, I've been ordering over-easy more lately...

Mostly Omelette or scrambled.....don't mind boiled. I don't particularly like over-easy.

Scrambled or omelette - I really went of fried or boiled having eaten a lot of those as a kid.

Depends on where I am. Restaurant? Omelette every time. Home will always be scrambled because it is quick and easy. When I'm at my parents it is fried. Something my mom does makes them awesome.

Oh for sure, at least a pound too! . Whenever my roommate and I are awake for breakfast it ends up being about 8 eggs and 2 pounds of bacon. Just enough to hold us over for a couple of hours   .

In the Smittyone household we make these little egg mcmuffin deals in the microwave using the liquid eggs (1/4 cup in a bowl for 1:15 = perfect). Throw on some ham and cheese and it's good to go.

When I go out I like a hearty 3-egg omlette at the diner.

I don't really eat eggs, and certainly not in the morning, nothing savory in a typical French breakfast.

If I'm out of sync or eating alone and don't want to spend time for a proper meal, I'll do an omelette with lardons and Herbes de Provence.

I like them to stay in the store. Awful texture and not a pleasing taste.

I suppose baked in a cake or muffin is acceptable.

Over-medium, in butter...just a bit runny.

I will also take them poached if eating breakfast out...but never at home. Haven't got the hang of it.

I eat eggs every other day, one day fried, with grated cheese and bacon bits on them and another day an omelet . I have scrambled only when my wife makes them. She has a knack for them, the best to me. I never order scrambled in a restaurant. I never eat the yoke of a fried egg, I do not like them, yet I do eat them when blended.

Two eggs, scrambled well. I also usually like a waffle with real maple syrup with that and some sort of meat product - either two rashers of bacon, or two links/patties of sausage.

Keep it up guys! This thread is an eggs-cellent idea!

I am partial to french toast, but with salt, pepper and a twist of lime on top - known as "Anda Bread" in India. Also yum in India are Masala Omlet ( onions, green chiles, coriander) and 'Bhurji' - similar but scrabled and eaten with Parothas. Back in the States, nothing like a good diner breakfast : eggs over easy with not quite crispy bacon and lashings of hot coffee.

In a restaurant it's an omelet, at home it's scrambled only. I used to like a fried egg sandwich now and then but over the years I've lost the taste for those for some reason. Sometimes with grits. During college I somehow developed a taste for those now and then.

Love three scrambled eggs with hash browns and sausage patty. Served with a proper English Tea in an proper English teapot. On Sunday mornings I wade through the pot.

Ideally, I like my eggs sunny-side up with the yellow runny and the white crispy. Since few people can get that exactly right, I order them "over medium" and hope for the best.

Alongside the eggs I prefer dry wheat toast and a bowl of grits (not a cup, a bowl. I know for certain I like them, I don't need to be served the "sample size" ).

Scrambled and fairly well done. And I don't like to toot my own horn but I do make pretty good scrambled eggs.

Every now and then I do like a fried egg sandwich. One fried egg, melted cheese and a slice or two of ham on buttered toast.

And the quality of the eggs makes a world of difference. While the regular old cheap eggs from the grocery store are ok, the cage-free/free range eggs do taste better.

I egg-spected a lot more of these in here. For my part, scrambled is best, egg-cept when I have a lot of leftover vegetables. In that case, it's most egg-spedient to make an omelet. Not too egg-citing, but when done right an omelet - egg-specially one with bacon thrown in - can be truly egg-squisite.

I have a sous-vide, so I scramble them then cook them at 138 to 140 degrees F for a few hours (longer time at lower temp still kills everything). Then I bump it up to 144 F for 30 minutes to thicken.

Then I take the resulting thickened goo and put it into one of those refillable whipped cream aerosol devices that takes the cartridges that people try to get high off of. Squeeze the trigger on a nice toasted piece of bread with a few pan-seared tomatoes. Result? Fluffed, whipped, scrambled eggs that are so light, perfect, and delectable.

When I don't have 3 hours to make scrambled eggs, though, I prefer them scrambled on the stove in a pan.
The above post is my opinion. Don't like it? Don't read it.

I am surprised that none of you have mentioned eating "exotic" eggs and the different ways that they are prepared,
for example:

- tiny Quail Eggs - I have had these raw, in which the presentation was served in a small porcelain spoon with sushi and caviar.
- large Ostrich Eggs - I have had these scrambled into one gigantic omelet - it is almost impossible for a normal person to finish one by themselves.

I have heard that fried Alligator Eggs are a delicacy as well, although I have never had the opportunity.

Are there any other types of species of eggs that you all have consumed? And in what way? And please don't be too disgusting, I was thinking of making eggs for dinner today... [SMILE].

I also have a few plastic microwave egg makers - and in a pinch, they do work quite well - just break up an egg, add some spices and seasonings to your liking and in just a minute, you can enjoy a nice fluffy egg right out of the container. An added benefit is that you do not necessarily need shortening/lard/oil to cook the egg, the microwave does the job.

Scrambled was the only way I would eat them when I was an kid, and to this day the thought of having scrambled eggs carries a stigma, as if I'm ordering from the children's menu.

Fried up or over-easy is how I order them now, although I'll wolf em down no matter how they're prepared.

I was a way-too-picky eater as a kid and for some reason I'm still trying to live that down.

I've never understood exactly what "soft-boiled" means; nor am I confident that I understand poachage.

I like them pretty much any way, when I am in a hotel I will try their omelettes as there seem to be a million ways to make an omelette.

At home I make scrambled eggs by whipping a few eggs in a bowl, not to a froth but just enough to break the yolks and make a streaky mix. I add salt, pepper, a tablespoon of mayonnaise for every 2 eggs, a splash of milk and Worcestershire sauce. Before doing this I have been to the deli and bought a slice of cooked ham about a centimetre thick, and a can of sliced mushrooms. I dice the ham and throw this and the mushrooms in a frying pan. Once they are nicely sizzling I take the pan off the heat and add the egg mix, stirring it with a spatula to prevent sticking. When it is about half cooked I add a pile of grated cheddar cheese and mix it up, letting it cook slowly with the latent heat of the pan. Delicious!

I like it "over hard" (essentially a fried egg cooked both side a long time), but alas, trying to get a short order cook to figure that one out in a restaurant can be a bit of an issue!
