You can be sure that the security rules in ZRH are state of the art. For example every single piece of luggage is controlled - not only after 9/11/01.
When you like, you can go the the visitors deck, where you are on top of the terminal - quite near to the aircraft. But you cannot reach this are without passing a special security control where you will be controlled.
I've also heard about the posibility of airport workers, to bring people "right to the planes", as you wrote. But that's possible at a lot of airports worldwide (I have done so in HKG last year). But - of course - also AFTER passing various security controls.
Security at ZRH is a top priority. I'm there as a spotter or visitor quite often. I have been on the tarmac and I know the security rules. When I was visiting the maintenance facilities once, I was at the tarmac to, but security personel was there too, taking care of everything.
So, you can be sure that the security is surely not lower than at other airports!! Almost higher than at a lot of places arround the world.
