United by far offers the most connecting options. If DC is your final destination, then defiantly take United. United will allow for more connections as you will be passing through a hub to get to a hub.
The service on the 3 class 777s going to Dulles from the west coast will offer an appetiser, salad, 3 meal choices, ice cream sundaes, and a light snack prior to landing. I believe that it is the same service the other way as well.
In First class on the Hawaii bound flight, I believe that it is a single trayed meal service. There will be a side salad, your choice of 2 or 3 entrees, dinner rolls and of course Chicago's finest Eli's Cheesecake.
United also flies 777s to Hawaii. These 777s are in a two class configuration with the domestic F class seats. The seats however are much wider. The first class seats on the 767-300 to Hawaii are much narrower...but are as wide as AAs and DLs seats in first.
This should be the easiest decision to make in your life...take United.
