Inflight Meals

As a regular airpassenger, i eat a lot of inflight meals, some good, some i wouldn`t feed my dog, but i must say, there is a noticeable difference between food quality served on early morning flights, which is always far nicer than some of the dried cardboard like monstrosities thrust under my nose on late morning-afternoon flights.
Can anybody please elaborate on this subject for me?

food you get in the morning and early afternoon has spent all the night and afternoon in freezers and storage boxes.
Food you get in the late afternoon has been stored for only a few hours.

I wish I were flying
