Joyriding On A Delta 777

What's the story behind this? Do all B777 pilots have to go through these "practice runs" that can't be accomplished in the simulator? I know that they must accomplish a certain amount of Initial Operating Experience (IOE), but these are usually done on normal regularly scheduled revenue flights. I assume there probably weren't any pax onboard since the plane was "off to HSV" after departing TYS.

Did they actually carry revenue passengers from ATL-TYS on the 777? If so, that would have been a pleasant surprise for the people booked on that flight?
