Reading your questions as I am working as there is no availability in Economy although there is availability in business class / First.
If the flight is over full in Economy(which I suspect by this time it may be). Qantas will call out for volunteers to those who wish to be bumped to say the other QF
flight. If any upgrades do occur they will be say for Economy passengers who paid the higher yield for their fare or are frequent flyers of a very high status.
As for aircraft QF10 will most likely be the following configuration of 14F,65J 315Y - with the old style business class.

1 it will be the configuration that has the new QF

As for cockpit views I would say no, even if there is a yes it would only be after flight shutdown and not during flight. QF
Policy is a locked cockpit during flight with most planes already having been equipped with reinforced cockpit doors. Nevertheless doesn't mean you can't try.
