Inside Security at ANC is now an observation deck. You can have unobstructed views of the entire apron between north and south terminals where all the cargo planes (save FedEx and UPS) stand while changing crews and fueling, etc.

I spent 2 days at ANC this past week (trying to get to work) and there was a steady flow of Malaysian, Cathay Pacific, China, JAL, FedEx, UPS, Northwest, Atlas, Southern, and a few others I can't recall. . . .lots of MD11s and 74s.

Enjoy it!

It's inside Security, so you'll need to be coming or going . . . there are a few other places around the airport to spot - but for spotting the cargo ops, that's the best.
