Booking With Frequent Flyer Miles

I just called AA today for my mom, and they are holding tickets for us going PHX-YUL. They have us going through DFW [2 MD-80s] going there, and through ORD coming back[ F-100 YUL-ORD MD-80 to PHX]. The flights TO YUL leaves PHX 6:40 and gets in YUL about 5:15. Do you know if there would be any meals served? Also, Coming back we leave YUL at 7:30 p.m. and get here at 11:43 P.m. do you know if there would be any meals here? The real question is, We booked using our AAdvantage miles, and to tell you the truth, as an aviation enthusiast i think it would be boring on 3 MD-80s. when they say "no more seats are available on that flight" does that mean 0 seats, or 0 seats for AAdvantage passengers? Is there any thing I can say to them to possibly get the desired Itenerary? [would be 2 757s and 2 f-100s].

Very likely there are seats available but no award seats. That's especially in case you are booking PlAAnahead awards (or whatever the awards with lower mileage are called).
