Using Regional Seating Config On Int Long Flights!

First would like to take to opportunity to say hi to every member on this site. It's my first time as a member.
Forgive me if my title isn't clear enough but as i was checking the Cathey pacific airlines website, I was going through their time schedule to Dubai and noticed that their using a B773 which is used mostly in their regional market because it is configured with their regional seating product and Dubai is an international route that is 8h by plane from Hongkong!
So just wondering on why would they use a regional seating config instead of their amazing international product? also, are there any other 5 star airlines that does the same thing?
