Since both South America and Europe are large places, would need specific city pairs to address the question. ie: YUL to CPH is quite different than MIA-MAD.

He asked about flights originating in SOUTH America.

They generally follow the coast of Brazil, then cross the Atlantic to the Cape Verdian Islands and the fly west of Africe, then entering the European continent over Spain.
Obviously, flights that originate in LIM or CCS follow a different route.
For an excellent tool that will give you a (rough) estimate of how the route will look like see http://gc.kls2.com/
Please note this website does not map airways but great circle routes instead.

I was giving examples in North America to show the routing can be quite different. If you want South American examples, then Caracas-Rome can be quite different than Rio to Rome. I do recognize the difference between North and South America.

When I flew CCS-AMS back in 1997...we flew kinda straight up from CCS onto southern spain and then made our way up to AMS. So the great circle mapper is a lil off on that one
ROLL TIDE!!!
