First of all their called "FLAPS"
Second of all you cant tell us the plane climbs slow because it will climb just how it will need to climb.. if you are taking off in a CX
744 to BKK
they will use derated thrust because for that flight the plane is light and will not require full thrust so a derated thrust will be used to not use a to big VS
and stay comfortable for the passengers.
It is a little more complicated than this so to clear things up any othe roperator will use derated thrust aswell and climb exactly how they need to climb. So not slower or faster than other airlines.
BTW there is no requirement telling the captain to retract spoilers after landing. He will following the checklist when the right moment comes.
