Greater seat pitch, choice of films, entertainment, radio and computer games at every seat. Phone at every seat (not one between three).
As for the food, try this menu for size. It was served to me in economy (coach, for our transatlantic friends) on Virgin Atlantic on August 7 2000 en route LHR-SFO (VS019) and was also served on VS flights 017,023,041,043.
LUNCH

Tomato and red onion salad with basil pesto dressing
Soft white floured roll
Main Course
Choice of:
Traditional English roast (beef, yorkshire pudding, roast potatoes,carrots,broccoli and onion gravy)
Mild Chicken Korma (chicken pieces marinated and cooked in subtle Indian spices with coriander rice, spinach pakora and a coconut sauce)
Mediterranean Vegatable Spirella Pasta (topped with Pecorino and goat's cheese in a light tomato and basil sauce)
Dessert:
Lemon and Lime Muffin Slice
Cheese and Biscuits:
Sturminster Cheddar with Italian herb crackers
Wine:
Choice of Virgin's own Cuvee Chardonnay 1999 or their 1998 Syrah, Merlot and Cabernet Sauvignon blend

REFRESHMENTS
during the flight everyone was offered a vanilla ice cream coated with fruit sorbet and, at another time, a hot filled panini sandwich.
Prior to landing the following was served:

Soft tortilla wrap filled with Greek salad
Tuna with spring onionon tomato bloomer bread.
followed by Carrot crumble cake with sultanas and a butter cream filling.

Drinks available throughout the flight free of charge:
Tea, coffee, cola, mineral water, Famous Grouse, Jack Daniels, Three Barrels Brandy, Courvoisier Cognac, Vodka, Gordons Gin, Bacardi, Martini extra dry, Southern Comfort, Baileys, Malibu, Tio Pepe, London Pride Beer, Fosters, Red Stripe, Orange/apple/tomato juices,Ginger ale, Sprite, Tonic water.
All served promptly, efficiently at the right temperatures.
The garbage collection was interesting- very few unfinished meals.
Yes I did say this was the economy selection. Premium Economy and Upper Class got steak as a choice of entree and also free champagne/bucks fizz but you could buy the bubbly in economy if you wanted to.
Over the years their service just gets better and better.
