As Amsterdam is my home airport, I can give you some feedback. Amsterdam is OK, they have spent lots of time and care on the signaling system, there are lots of tax free shops, enough seats to rest, friendly staff desks to help you out if you have to transfer etc.
But it has some drawbacks too:
Till 8 years ago, Schiphol was very compact; out of one center, 4 terminals radiated and you could walk for any change of planes within 10 minutes. But now they stretched some of the terminals and attached two new ones on either far side of the terminal. If you now have to get from one side of the airport to the other, it will take a tremendous time and effort; only roller bands which are quite slow and only on small sectors of the distance, while a people mover train might be more appropriate.
Another drawback is there are loud multilangual announcements about every leaving flight every minute, if you have to prepare office stuff or want to take a nap; impossible!
nobody has ever died from hard work, but why take the risk?

Just to let you know... the transfer desk routine is a major pain in the rear end. Unlike most US airports you cannot proceed to your connecting gate with your boarding pass. You must go to the transfer desk even if you have very little time between flights. Also checking in at the ticket counters from your return journey can be quite a challenge. That is if you are staying in AMS. Unlike a row of ticket counters with an organized line there are several check in islands and woe is the person who stands in the wrong line.

The positives are... good transportation to and from the airport. Nice shops, not too expensive. A McDonalds if you miss the American staple, generally a very homely environment unlike the sterile atmosphere of FRA, and wonderful people watching. Customs and Immigration are also very convinient and polite.

AMS is and continues to be voted the best airport in Europe.

If you're connecting through Amsterdam (especially from North America on NW or KL) then by all means, keep your luggage with you. DO NOT CHECK IT! However, you will get boarding passes all the way through to your final destination if continuing out of AMS on KL or a KL partner.

If AMS is your final destination, then you'll be in great shape. No transfers to worry about, your luggage should make it, and it's a great airport.

In over 40 years of flying to, from and via AMS I can not recall a single bad experience related directly to the airport as such.

This does not mean that Schiphol doesn't have it's negative sides, the worst being the security checks at the gates and halfway down the forks of the D-pier. Splitting the airport into Schengen and non-Schengen areas is also rather inconvenient in many ways.
In spite of this, as well as the points mentioned in previous posts, Schiphol remains on of the better major transfer hubs.
