Who's Flying The Plane?

At what point in the flight does the captain turn off the A/P and fly the 'plane by hand? If ILS approaches are in use due to low clouds, is the pilot still flying or does he let the A/P fly the coupled approach? I would think that pilots would like to fly the approach and land the plane themselves, rather than push buttons and watch. Am I correct?
