That'll be very risky especially if you are an unaccompanied companion. As an employee with seniority it might work, but even then it is risky. You just have to be prepared to get stuck for a few days or get very creative which can get difficult. Getting there often is the easy part.
If you have never designed an airplane part before, let the real designers do the work!
Not sure which city you're trying to head to HK from, but I believe most people flying on those days are actually heading in the opposite direction, i.e. leaving HKG to North America a few days before the holiday, and return a week or two after, mainly for holiday or VFR
P.S. For Hong Kong, this year's holiday is Feb 13-16, with Chinese New Year on the 14th
