You can either dip your toes into the Atlantic Ocean in places like Cancun or Cozumel (the area offering the option of a tour to the pyramids at Chitzen Itza) or into the Pacific Ocean at Puerto Vallarta or Acapulco.
Apparently, lots of U.S. tourists go to all these places, which can be a positive or a negative thing.
(Personally, I found it difficult to distinguish Cancun (the resort area) from any given place in Florida ...)
Other options could include Jamaica, Puerto Rico, the Dominican Republic (consult weather charts, as weather on the Northcoast tend to be contrary to the Southcoast in terms of rain). And, of course, most of the smaller islands around.
If ou like some European touch, consider the ABC Islands (Aruba, Bonaire, Curacao) or, as mentioned by another poster, Saint Martin / Sint Maarten.
If politics would allow, also Cuba and Venezuela could be options, both being countries with a lot to see.
Costa Rica is said to boast a very rich nature, make it ideal for exploring rain(y) forests and the likes.
The coast off Belize is said to feature some of the best scuba diving spots.
As you are allocating only a single week here, I am not sure if any longer flights would be a good idea. A distance like to Venezuela might be the farthest to look ...
