I'd take BA,T5 is brilliant and onboard service has never failed to disappoint, that said, if you've not flown on an A340-600 and like flying different aircraft, choose Virgin.

Well if taking BA then make sure to leave plenty of time to transfer terminals, since obviously you will arrive into LHR on EI and from what I´ve heard transfering between terminals is quite lenghty.
Unless they have improved (also factor in the terminal transfer time on the way back)
T5 will definitely be a nice thing to see, and the service on BA is obviously good, as for the seat I would choose 51 A to K since its a 2-2 layout and there seems to be some extra space.

Ypu should be able to book the EI flight with a BA flight number on BA.com and you will get your bag tagged all the way through. The transfer between t1-t5 is about 20 minutes and would be worked into your transfer time.

If you do go with BA, the last row in Y are great seats ... only one seat neighbor instead of the usual two on the 747, also if you take the window seat, your seat and the seat infront of you won't be right up against the wall so you'll have a bit of space between the seat in front and the aircraft wall to stretch your legs. The only drawback is that the last row of seats only recline about halfway, but its worth having the extra leg room and only one seat neighbor IMHO.
