Flying A Cessna In Australia And Elsewhere

Am I right that there's a company in Australia known as General Flying Services operating a number of Cessna 172s? Are they offering quick pilot courses so I can fly a Cessna in no time?

And, are there any other sites like these around the world? I think I've seen on Discovery Channel that even without a pilot license (sp?), anyone can pilot a fighter (didn't notice what kind of fighter it is) and try to simulate shooting down other planes over an AFB.
