What you get when you order from Essco Aircraft depends on which manual you happen to get.
I purchased a 767 ops manual because I was simming with 767PIC in FS2002, and I got only Volume I of the Ops manual which was just operational and reference info, limitations, normal, non-normal procedures, and systems descriptions and a section that did describe the FMC and the VAB-ology and button pushing required. But it was missing Volume 2 which has performance information that it seems like you are looking for with the 747.
I also ordered a 737-200 manual because I am looking at getting a type-rating at some point and wanted to get a head start at aircraft systems. The 737 manual did come with both volumes 1 and 2, so I did have performance charts, but only with the JT8D engines not the CFM56 engines.
The manual was very specific at what were airline limitations and what were Boeing limitations, sometimes the limitations are different.
Since aircraft/engine combos are specific to each airline, the NW747-400 manual you are looking at probably won't have the info you are looking for in terms of performance for every engine combination possible with a 747-400. It will have only what Northwest operates and Northwest Airlines procedures. But then again you might only get a volume I... since the FMC calculates everything for you...
I think the only way to find out is to call to see exactly what comes for the price...
