Cargo Planes Payload Vs Fuel?

The 747F has a maxiumum payload of around 110 ton and can travel 8000km. That means a lot of fuel. Can you for example put 150 tons of cargo and fuel for only 3000 km? Would it work? Are there some kind of restrictions?

Maybe you can - check the maximum zero-fuel weight.
I seriously think I just creamed my pants without any influence from any outside variables.

No you will run up against a ZFW weight problem. In the 744F there is the ability to increase your ZFW and reduce yout MTOW to handle short sectors. I don't have the reference in front of me, but IIRC the payload approached 120 tonnes.

max increased ZFW on a -400 is 288000kgs
average DOW is 160000kgs
this gives you around 128000kg of payload, when ZFW restricted.

the MZFW on a B747-400F is 276t ( comp 610000lbs ), if you have a DOW of around 160t you may load up to 106t into this aircraft, but depending on route resp fuel burning this can sometimes be not possible.

example:

FRA-NRT
DOW 350000lbs
PAYLOAD 260000lbs

makes an actual ZFW weight of 610000lbs ( limit )

but if you would need 340000lbs Take Off Fuel and Burn off of 310000LBS you cannot load all of your cargo as MTOW is 910000. so your maximum allowed payload is only 230000lbs

Not sure which -400 you are talking about the classic has a MZFW of 272T the BCF has a MZFW of 276T and as said the 400F has a MZFW of 288T.

Perhaps you'd like to revisit those numbers. For the 744F it's 288 Tonnes. So, there's a missing 10Tonnes.

Not all companies bought the extended ZFW option that is why he is using 276 T.
