Well as far as pilots go LGW
was usually two crew but the Caribbean runs were all three crew (mainly because all of these routes were double drops and over 11 hours).
As for the cabin crew, just prior to our demise we reduced to minimum crew on the longhaul flights 8 crew on the 767-300, (the same if the 762 was used as backup so the correct number would be downroute for the return trip on the 763). However, we used to operate with 9 or 10 on the longhaul runs. They were tough flights to do, 11+ hours with two drops and then a long ride to the hotel... We managed, no rotation or anything just carefully placed breaks in between services.
EDIT: Forgot to mention, on my first 767 run we had 13 cabin crew, more than there were jumpseats. Flightdeck seat for me then
