Desperate FSX Autopilot Problem- Help Needed!

Hello. On the last six flights I've attempted on FSX, at around 18,000 feet climbing on autopilot (never more than at a climb rate of 2,500 fpm) every plane begins to climb at angles upwards of 60 degrees and even when I turn the autopilot off, the plane keeps going. Also, the trim seems to have no effect on correcting this. Apparently it doesn't matter what plane it is becuase on each flight I have used a different plane. Does the airspeed plummet or remain about the same when this is happening? Are you using real-world weather? If so, are you loading winds aloft and have the winds below 18,000 ft been particularly strong in your last few flights?

I just wonder if youy're hitting a large, sudden change in headwind at 18,000 ft but I don't know exactly what constitutes "winds aloft" in FS.
