Help With Air To Air Shots

I fly often between Darwin and southern ports here in Australia, and often we spot the on comming conntrails of jets off to asia. But whenever I try to get a shot of the AC as it passes I miss it and get a shot of the contrail instead. this is despite the ac being in my view. What am i doing wrong all advice appreciated
thank god i was not born a bird. this type of flying is much better

What sort of camera are you using? Is it a compact camera and hence you are experiencing the dreaded shutter lag?

As Manzoori says, it could be shutter lag - or a slow electronic viewfinder.
Nikon D700, Nikkor 80-400, Fuji X Pro 1, Fujinon 35 f/1.4, Fujinon 18 f/2
