Very nice shot indeed.. if I'm right, the pilot is just holding on with his right hand during the catapult shot and grab the stick after take-off, so that's why it looks like he's giving the 'thumbs up' to the crew.

The rudder isn't missing, they are set in take-off position, the work as elevator. It's just about the view..:D

I am not sure, but it looks like the pilot still has his hand in the "thumbs up" position to let the crew know that he is ready.
