UA is focusing on destinations those carriers can't or won't serve as well as International NYC local traffic.
Part of this is the plan to remove all single class regional aircraft from EWR. All UAX flights will be on the E-Jet or the CRJ-550.

If they were to use 2 aircraft each one would be flying less than 40 hours per week. Low utilization is expensive even if you have the slack in your fleet to do it.

The timing is so that they can fly the flight with one aircraft without it having to spend a ton of time on the ground in NY. Although I don't know why they're not doing like a 1130 departure with a 2325 arrival into EZE. That seems like better timing that still leaves plenty of time for the turn

It's also entirely possible there were variations in the paint on each one as they were essentially bought 1 at a time. They had a variety of different interiors. Even their first MD-80 was bought as a one off to add capacity during the NW strike.

I think the reason for the low frequency for AA on ORD-PHX is that they're trying to minimize long lower-yielding domestic flying. There are numerous connecting opportunities over DFW and ORD (although AA's frequency on ORD-DTW has been pretty low the last few months).
