Holding your hand up in front of the camera and metering off of that has been an "old wive's remedy" to meter your subject for many years.
I use Nikon RAW. Once I've got the image I want I save as .jpg and include the original RAW file in the folder. I then make a copy of the folder onto an external drive and every so often make a second backup of a whole bunch of folders to CD/DVD
