For your needs, I think Nikon d7200 should be nice - as it has more reach for birds and wildlife. Canon 7D2 is also a good choice because of its AF. I personally prefer Canon's 100-400 Mk2 over Nikon 80-400 VR2 but you won't go wrong with either.

It really depends on a lot of things. You're not tight with the budget, but what kind of photography will you do other than shooting aircraft? If you want quality camera, take a look at Nikon D750. I prefer adobe's ACR 6.4 for CS5, other than that I use Capture One Pro. I found better 60D's high ISO RAW conversion better with the ACR 6.4, though. It handles noise without artifacts.

Image quality depends largely on the lens - and your skill. If you shoot at ISO100/200, all of the entry level cameras are more or less equal in term of image quality (pixel sharpness, noise, DR, etc.).

Although I could never say 'plastic is better than metal' in case of 50D vs 60D - plastic is not necessarily inferior. 60D still feels solid and handles very well. Sure it misses some buttons/controls found on 50D, so 50D/7D users need to adapt for a while. Regarding noise control, it's a mixed bag....

I happen to have 60D and did try the 7D for two days. The 7D has the noise banding at ISO100 and 200 - but you really have to push the exposure/brightness of the shadow up to 2-3 stop in photoshop to see the banding (I see no reason to do that so this is no issue actually). I personally like the 60D...
