MUC has an outdoor area on top of the terminal that LH uses (I forget if that is Terminal 1 or Terminal 2). It is open-air, but is behind glass. MUC also has the hill with the view of the "everybody else" terminal, with good views of the runways.

Have you considered departing out of SAN at least on the outbound (HA 15, SAN-HNL, A330) ? That flight departs at around 9:45 AM and the drive from Anaheim to San Diego isn't much longer distance-wise compared to LAX.

My parents have done SAN-MSP-AMS (and return) at least a couple times and enjoyed the experience. They thought it was an easy connection and prefer the "smaller" airports (like MSP) over airports like LAX, just for the relative ease of getting around.
