Their website lists 19 cancelled flights for today. Is that all they had planned to operate? As far as the reason, I would imagine ASA either cut off their fuel supply or their employees are refusing to work since they have not been paid. Both possibilities don't bode well for Interjet.

Meals from the west coast can be much better. Surprisingly I quite enjoyed the quality and quantity of food for dinner and breakfast from SFO-CDG two years ago on UA. If quantity is an issue, you can always ask for extra food after everyone has been served.

MEX is slot restricted and Volaris has not had much success in beach routes from the US. VFR routes are their bread and butter. ABQ-CUU strikes me as a very short route for them to pull much traffic away from car and bus travel but we will see how it performs.
