About Emirates replacing 777s; the 777X is unproven and delayed.
Emirates still has A380's on order that they prefer not to take, possibly they can make a deal with Airbus to exchange these orders, in exchange for Emirates ordering A350s and dropping the 777X. It's a possibility, though unlikely.

Airbus D&S Order backlog from Nov.30 2020 list a total of 9x A330MRTT for NATO and 12x for France.
At the beginning of 2020 it was 8x Nato and 12x France. So one MRTT for NATO was added in 2020.
The A330 for France hasn't been includes in the list jet.

I think Embraer has the most simple path. Reengine the E170/E175 E1 with GE Passport instead of GE CF34-8 engines.
