The flaps are left extended (leading edge) mainly in the summer months at hot airports, so that the bleed air ducts in the leading edges dont get too hot and set off the bleed overheat msgs. you mainly see this on Airbuses

The fuel freeze point has to be considered as at some airports in the USA they only have JET A (-40 C)
and not JET A1 (-47 C)
So the fuel freeze point is checked before flight to establish the freeze point of the day

You don't want the fuel freezing in the wings in flight

If you hold a ticket with money on it you could get SAA to endorse it to be used on other Airlines and try standby with them as well.

Airbus are doing route proving flights for VS with the A346 that's why they will be goin to HKG and NRT the schedule also involves LAX as well. As stated above they will be doing these flights in April.
The final flight schedule for the VS flights haven't been confirmed yet.
