Recently one of my friends took his first ever flight. He was traveling on a Delta Airbus A310 from St. Louis to Atlanta. How do smaller aircraft(Saab 340) do there safety demo w/ only 1 flight attendant. Do they talk then lay the PA down and demonstrate it?

I was watching a TV show and it showed a 757's doors being closed and two people were closing them; one would grab the door lever and the other would pull in the door. Is this normal for all large aircraft?

CRJ Rudder Checks
At my airport We have CRJ's from United and Northwest. My question is,why do all CRJ's do Rudder Checks before leaving the stand whereas no other aircraft does(MD-80,DC-9,717,ATR,BAe146,Saab 340,J-41's)
