I believe that the 1.3x crop is a good compromise between full frame and the 1.6x. It gives good telephoto reach with good use of the wide angle lenses as well. The 1.6x crop factor of the 30D may help your reach with zooms.
Also, the 30D has a faster 5 f/s burst rate than the 3 f/s for the 5D.

I'm not a 30D user but I believe that when you're taking photos of white fuselage paint, you need to underexpose a little (1/3). Other paints may not need this and you can even overexpose by +1/3.

The camera uses the very same sensor and processor of 20D so I think it should give similar results.
