I don't think its a 25 minute exposure - look at the ground staff. Don't think its a composite either. My guess its an in-camera multiple exposure taken over a period of 25 minutes.

Assuming you are using a recent version of Photoshop, the noise reduction on Adobe ACR is very effective. Of course you need to shoot raw to use it. But, if that applies to you, I would experiment with that before buying add-ons

It seems the days of silky smooth images are gone, lost in the quest for ever higher pixel counts - at least with Canon sensors. Even my wonderful 5D3 has a "texture" in blue skies at 100 ISO (barely discernible, but there) which didn't exist with my original 5D. Of course it is in a different leagu...

It depends - I general I favour single point, with my thumb on the joy stick to place the point where I wanted it. One of the nice things about the 7D is that all the focus points work well. The zone mode is really useful when the action is fast and furious - one of my 7d tricks is that you can stor...
