Shashlyk! Who Likes It?

Who amongst the Russians and other Soviets or guests thereof here loves shashlyk and why? In the last couple of weeks I have had real Shashlyk a few times and could, to be honest, have wet dreams about it. It is the best meat experience Iknow of.

Tell me your experiences, how you love to make it.

Pork is a given. A bit of fat is required. Medium-long cooking on wood fired is required. Vodka, salads and various other things are also required.

It is a pretty common meal here in the Ruhr-Area, you can get "Schaschlik" here on every corner. Usually you get the Schaschlik in a plastic bowl (already off the spit) with a spicy sauce, french fries over it and mayonnaise on top. I had it last week for dinner and I guess I'll buy a bowl tomorrow after reading this thread.

Cold weather is required as well in my opinion to fully enjoy it  .

I love to eat it! However I don't like it very much when it's warm outsides like in the summer. On a real cold winter day when temps are like in the 20s I'm enjoying it very very much.

Well, I'm sure it was ok, but to be honest, I doubt very much it was anything as good as the real thing - either in the woods or at someone's dacha. I have also heard/read the name elsewhere without fully understanding what is really involved in the truly tasty article!

Yeah, it is fast-food over here. No doubt that the self made version tastes a lot better! Well, hopefully I have the chance to try the original Russian version of it one day.

I have never tried real Schaschlik, but I do know it's something that I would definitely eat.

It very much depends on how it's made. The quality of the meat, the marinade, the way it's made and how and with what it's served. Most of the time it's somewhere between mediocre and tasty (pork hardly ever gets past mediocre, lamb is the way to go), but if everything is pitch-perfect, it can be heavenly.

I have twice had really delicious shashlyk. Once when visiting relatives living in the countryside (had a chance to be a part of the entire process, including patting 'the Chosen One' on her back before her throat was slit), and another time in a restaurant in Riga. The chef was from Tbilisi, and he knew his trade at a divine level.

Generally speaking, though, in the former soviet union, where-ever you are, there are three things you can always rely on in any restaurant/bar/diner menu: selyanka, chicken kiev, and shashlyk.

I love shashlyk!
Had some while visiting Russia in 2006. While visiting friend and Airliners.net member Tu-204, we had some out in the woods on the outskirts of Moscow along with a lot of Baltika to wash it down with.

Love it. The best I ever had I think was in Kyrgystan. A street vendor in Bishkek had the grill and a few goats tied up next to his stand. Whenever he ran short of meat, one of the goats would get slaughtered right there on the sidewalk, he'd dress it and cut it up right on the spot. Talk about fresh meat...

We make it at home. Use pork neck (whole), cut into good-size chunks. Slice 1kg of onion. Slice 1kg of tomatoes. Take 500ml (or more) of mayonaise, add meat, onion, tomatoes, some coke (if you can't get kvas), combine well (get your hands dirty). Let it fester overnight in the fridge.

Next day prepare an open grill (wood is best, but charcoal will do also). Thread the meat onto the skewers. Place onto coals and grill till it smells good (and the juices run clear when you cut the meat).

In a pan or pot, take the onions and tomatoes and slowly roast them. Take meat off the skewer and place on plate with the now ready onion/tomato/mayo roasted mix, and cover with a piece of lavash (or any other flat bread). sprinkle with some chopped dill.

Useful garnishes include boiled potatoes, or salted cucumbers, etc.
