I've tried to find sources but both films say he didn't fly one, but I'm asking if he's actually flown a jet at any time.
To me, it would be weird for him to do a huge amount of stunts, thrill activities and not fly a jet one time.

Would have to inquire with someone familiar with his activity at VNY or elsewhere. His records are sanitized from the FAA airmen search engine.

He flies a HondaJet, when he was in Norway he flew into the town I live in in his HondaJet.

Don't know what you mean. at least for Top Gun one and two many shots were filmed in the air. The actors actually flew in the backseat of those Hornets and Tomcats. I believe he owns the L39 you see in Top Gun II, so he flew those sequences in the movie.

I know it's not a jet but he owns the P51 from the second movie. It's a high speed high performance aircraft that has (IIRC) kills against the Me262 during the war. Should definitely count for something.

There was a L39 in TopGun Maverick?
It was the cameraplane, but I don’t remember it featuring in the film.

That wasn't Top Gun - that was for James Corden's show. Don't recall the L39 being in the movie.
